A simple, fresh, and very eye-catching snack - perfect as finger food too.

š Rice paper ā 1 sheet
š Jackfruit ā 80 g
š„ Avocado ā 1/2 (approx. 60 g)
š„ Violife vegan sour cream orĀ vegan plain yogurt ā 40 g
š Tomatoes ā 40 g
š§ Garlic ā 1 small clove
š Juice of ½ lime
š§ Salt
šæ Fresh basil

š©āš³ Instructions
1ļøā£ Cut the rice paper into 6 equal pieces.
2ļøā£ Heat the oil for frying in a pan while you prepare the avocado dip.
3ļøā£ Avocado dip: Mash the avocado in a bowl, add the pressed garlic, lime juice, a pinch of salt, and the Violife vegan sour cream. Mix well or blend with an immersion blender until smooth.
4ļøā£ The oil must be very hotĀ - if itās only warm, the rice paper wonāt puff up properly and wonāt fry well.
5ļøā£ Fry the rice paper pieces briefly. Once puffed, remove them and place on paper towels to absorb excess oil.
6ļøā£ Jackfruit: SautĆ© the jackfruit in a pan with a little olive oil, season with salt, add a small splash of water, and cook for 5ā8 minutesĀ until tender.
7ļøā£ To serve: Top the rice paper chips with jackfruit, finely chopped tomatoes, add the avocado dip, and finish with fresh basil šæ
