🎂 PKU Magic Birthday Cake made of American Pancakes

🧺 Ingredients

4 pancakes,

total approx. 280 g →

1 pancake approx. 70 g = 17mg Phe


  • 110 g Loprofin Damin flour

  • 140 ml ProZero milk

  • 2 tbsp granulated sugar

  • ½ tsp baking powder

  • ½ tsp baking soda

  • 20 ml sunflower oil

  • 1 tsp vanilla essence

  • 10 ml apple cider vinegar

  • 1 quail egg


Cream (for filling and covering the cake):

🥣 Vegan mascarpone – 250 g

🥛 Vegan whipped cream – 125 ml

🌼 Vanilla essence – a few drops

➡️ The weight of the cream will be approximately 500 g after mixing with whipped cream, and used:

  • between individual pancakes

  • also for covering the entire cake


Cake toppings of your choice:

🍓 Jam – to spread on each pancake ( we love raspberry jam )

🍓 Fresh fruit – of your choice (I use raspberries and strawberries)

Method


1️⃣ Preparing pancakes

First, we will prepare PKU American pancakes according to a separate recipe. Mix all the ingredients and bake in butter on both sides until golden. Let the finished pancakes cool completely so that the cream does not melt when layering.



2️⃣ Cream – cake topping

First, whip the vegan mascarpone separately until it is completely smooth.

This step is important – if the mascarpone is not mixed separately, lumps could remain in the cream.

After whipping the separate vegan mascarpone, gradually add the vegan whipped cream and mix until a smooth, stiff cream is formed .



3️⃣ Layering – pancake tower

Place the first pancake on a tray or plate and spread a thin layer of cream on it . Cover with another pancake and repeat the process until you have a pancake tower .

Spread the remaining cream over the top and sides of the entire cake .



4️⃣ Decorating
