š¾ 7 tablespoons low-protein flour
(I use Nutricia Loprofin flour)
š” 1 egg yolk
š» 1 tsp sunflower oil
š§ a pinch of salt
š¬ 2 tsp brown sugar
š„ Milupa LP drinkĀ ā approx. 300 ml
š„ Filling
š„ 250 g vegan mascarpone(Rajo Vegan used in this recipe)
š„ 100 ml vegan whipping cream(Hulala or Schlagfix)
š¼ a little vanilla essence
š„ 5ā6 kiwisĀ (depending on size)

š©āš³ Instructions
š„ Pancakes
Combine all pancake ingredients and whisk until a smooth batter forms. Heat a pan, add a little bit of sunflower oil, and cook the pancakes on both sides until golden. Let the finished pancakes cool slightly.
š„£ Filling
Whip the vegan mascarpone together with the vanilla essence using a hand mixer.
š” Tip:Ā Whip the mascarpone first on its ownĀ to ensure it is completely smooth. Then add the vegan whipping cream and whip until the mixture becomes firm and creamy.
š° Pancake Roll
Lay 6 pancakesĀ next to each other, slightly overlapping (as shown in the photo).Spread a layer of mascarpone cream over the pancakes, arrange the kiwi on top, and cover with another layer of cream.Carefully roll everything into a roll.
š” Tip:Ā Before slicing, chill the roll in the refrigerator for at least 30 minutes (ideally up to 1 hour).This helps the cream set and makes slicing much easier.
