Ingredients:

13 doughnuts / 375g = 190mg Phe - 1 doughnut (30g) is calculated as 15mg phe.

🍩 Low-Protein Donuts – Ingredients

🌾 220 g LP flour (I used Loprofin)

🥛 100 ml LP drink (50 ml warm for the yeast + 50 ml for the dough)

🧀 15 g fresh yeast

🍬 2 tsp sugar

🧂1 g salt

🌿 2 g xanthan gum

🥚 1 quail egg

🥄 1 tsp baking powder

🌻 1 tbsp sunflower oil

🍎 1 tbsp apple vinegar

🥄 10 g vegan sour cream (I used Violife – 0 g protein)

🍋 1 tsp lemon zest

🧂 pinch of salt

Decor: vegan chocolate or simple lemon glaze (100g powdered sugar, 2tbsp lemon juice, 3 tbsp hot LP milk)

Method:

  1. We will start by mixing fresh yeast, 50ml warm LP milk and 1 tea spoon of sugar. In the second bowl, mix the rest of the ingredients, first flour, baking powder, + tea soon of sugar, warm 50ml of LP milk, 1 tea spoon of sour cream.

  2. Mix everything properly and make a nice dough.

  3. Dough has to rest in bowl at warm place arround 1 hour = it will double the size.

  4. After 1 hour, roll out the dough on a floured board and to be 1cm thick.

5. When you have your dough in a shape of doughnuts, leave them to rise for another 15-20 minutes. They will rise nicely.

6. Fry doughnuts in oil from both sides until golden. Drain on paper towels.

7. You can get as creative as you want, I have used vegan chocolate to finish the decor. And we also love lemon glaze as its super easy to make. Bon Apettit.
